Well hello there! I’ve been taking a long break, to take a vacation, enjoy life to get ready for exams and get this long, long, long semester over with.
Now that the grades are in and the pressure’s off I can breathe out with relief and share a super quick and easy and most of all very delicious little no bake cookie treat.
What are these No Bake Rice Krispies Cookies?
These No Bake Cookies are made with just a few simple ingredients that require little of your time and effort. They are super light, as the rice krispies add to the crunch and crispiness, while keeping the cookies almost weightless. The combination of roasted nuts and seeds with chocolate make these fly off the table like hot cakes, at parties!
How important is roasting of the Nuts and Seeds?
You can forgo this step if you’re in a hurry, but I would not. Roasting the seeds and almonds brings out the beautiful caramelized flavor that makes these cookies absolutely irresistible!
What kind of Chocolate to use in Chocolate No Bake Cookies
This recipe uses Candy Melts for their ease of use. While using real Chocolate (chips or bar) would probably be better for flavor, melting chocolate requires special equipment (thermometers) and lots of know-how. All of this can be avoided by simply using Chocolate Melts.
Can I use Dark Chocolate Candy Melts?
This recipe uses White Chocolate Candy Melts, but it can successfully be made with Dark Chocolate Candy Melts as well. This one is really up to you.
Now get together with someone and make these, you’ll want someone else in the kitchen when these are done, or there’s the temptation to eat all of them in one sitting!
No-Bake Rice Krispies Cookies
Yield: 20-30 no bake cookie clusters
Ingredients for Easy No Bake Cookies:
- Ensure that the peeled sunflower seeds and the almond slivers are fresh. Taste both and make sure there’s no bitterness.
How to make No Bake Cookies:
- Roast the almonds and the seeds separately
- Microwave the chocolate
- Combine all ingredients together and mix until everything is well coated in chocolate. Try to work quickly or the chocolate will harden.
- Using an ice cream scoop or a regular spoon, spoon the mixture into about 20-30 mounds.
- Separately melt the dark chocolate, and pipe it or drizzle on top of each no bake cookie mount.
Kids like to help with decorating things like this, so go ahead and make them part of the process. They can help with drizzling the chocolate, or putting sprinkles of choice on top.

No Bake Rice Krispies Cookies
No Bake Rice Krispies Cookies are super quick and easy cookies that kids and adults love alike.
Ingredients
- 2 Cups Sunflower seed kernels roasted
- 2 Cups Almond slivers roasted
- 3 Cups Puffed Rice unsweetened
- 2 Cups white chocolate candy melts or milk chocolate candy melts
- !For Decoration
- 1/4 cup milk or dark chocolate candy melts or opposite to what you used as the main binding chocolate above
Instructions
Roast Nuts

Roast 2 cups sunflower seeds by spreading the seeds on a baking sheet and roasting in a preheated to 350F oven for about 5-8 minutes or until they taste roasted.

Do the same with 2 cups almond slivers. Watch the oven very closely as the nuts burn very quick and easy. Allow everything to cool to room temperature.
Melt Chocolate

Place 2 cups white chocolate melts into a microwave safe bowl and microwave the chocolate for about 2 minutes, in 20 second intervals, stirring after each time until the chocolate is mostly melted. Then remove from the microwave and continue stirring until all chocolate is melted. Take care not to overheat or the chocolate will seize and separate.
Mix Everything Together

Combine the nuts, 3 cups puffed rice and 2 cups melted chocolate in a bowl and stir everything together until all ingredients are nicely coated in the white chocolate.
If the mixture becomes dry and hard before you’re able to proceed to next step, place the bowl with the mixture in the microwave for 10-15 seconds or until the chocolate is nice and melted once again.
Spoon Mounts

Using a spoon or an ice cream scoop, spoon mounds of mixture onto a parchment paper an inch or two away from each other.
Decorate

Melt 1/4 cup dark or milk chocolate in the microwave in 10-15 seconds intervals until liquid. Fill a ziplock bag with the chocolate mixture, snip the end and drizzle each mount with a swift back and forth motion with chocolate. Alternatively make a cone out of parchment paper, then fill it and proceed as described above. Allow the Nutty Boy Clusters to sit at room temperature until the chocolate has hardened and the clusters are no longer sticky to the touch. Keep in a closed container at room temperatures for up to a week.

No one really has a name for them. We just all know them as those really addicting white chocolate clusters lol.
