Cucumber Salad is a bite of summer in a bowl, it is fresh, crunchy and with just the right amount of kick from garlic, which makes it a perfect summer side dish. The Cucumber Dill Salad can be made ahead of time with no loss of flavor, which is a win-win in my book!
Wash cucumbers and dill, then trim the ends off the cucumbers. Trim and discard the stems of the dill.
Cut the cocktail cucumbers into four, lengthwise. Then, finely chop the dill, press the garlic through a garlic press, or mince with a knife.
Combine all ingredients (cucumbers, dill, garlic, olive oil, salt, vinegar and black pepper) together and toss to coat.
