The BEST strawberry rhubarb crisp! This easy rhubarb recipe has the perfect crisp topping that your entire family will love.
Preheat oven to 350F degrees.
In a bowl combine 2 cups rhubarb, 2 cups strawberries 1 tsp lemon juice and 1/3 cup sugar. Separately whisk together 1 tbsp corn starch and 2 tbsp water. Now combine the two mixtures and mix thoroughly.
Transfer to an 8"x8" baking dish or any other ceramic deep dish and spread into an even layer.
Mix all ingredients(1/2 cup flour, 1/2 cup oatmeal, 1/2 cup almonds, 1/4 cup sugar, 1/4 brown sugar, 1/4 tsp salt, 1 tsp almond extract and 6 tbsp butter) in a bowl until the mixture is moist and resembles crumbles.
Sprinkle the mixture evenly over the fruit.
Transfer the baking dish to the oven and bake at 350F degrees for about 45 minutes, or until the fruit sauce in the middle is thickened and bubbles.
If the crisp top browns faster than it is baked through, tent with foil.
