Cottage Cheese Pancake Recipe -Quick breakfast chockful of delicious cottage cheese (think - protein), comes together in a jiffy and is eaten even faster!
Whisk together 4 eggs, 3/4 cup sugar, 16 oz cottage cheese, 1 cup buttermilk,1.5 tsp of baking soda and 1 tsp of vanilla extract until homogenous. Now add 2 cups flour and whisk until combined.
TIPS for Success:
nonstick pan in this recipe is essential, as the pancakes tend to stick quite a bit. If you have a nonstick pan and it still sticks, add a little more oil to the pan. Once you add the flour, do not mix more than needed to bring everything together. Overmixing creates tough pancakes. Covering the pancakes with a lid between flips, speeds up the cooking.
