  • 1.5 cup sour cream
  • 1.5 cup heavy cream at least 33% fat content
  • 1.5 cups powdered sugar
  • 1 tblsp vanilla extract
Simple Syrup
  • 1/2 cup sugar
  • 1/2 cup water
  • 1 tblsp vanilla extract
  • 1 cup prunes soaked in warm water or rum, chopped
  • 1/2 cup walnuts chopped
  • 1 cup crushed chocolate cookies only 1/2 cup will be used
  • 30-35 dry blueberries
Simple Syrup
  1. In a small saucepan, bring 1/2 cup sugar, 1/2 cup water, and 1 tbsp vanilla extract to boil, mix until all sugar dissolves. Turn off heat. Let cool.

  1. Preheat your oven to 350F.
  2. Line two 8 inch baking pans with foil or parchment paper. Spray with non stick spray. Set aside.
  3. Pour warm water over 1 cup prunes to soften them. Set aside.

  4. Finely chop 1/2 cup walnuts. Set aside.

  5. Melt 6 tbsp butter in the microwave. Set aside.

  6. In a bowl of a mixer fitted with the whisk attachment whip 5 eggs on high for 1 minute. With the mixer still running slowly add cup sugar and continue whipping for 5-6 minutes, until pale yellow and fluffy.

  7. Meanwhile combine 1¼ cup flour, 5 tbsp cocoa, and 2 tsp baking powder and get fine sieve ready.

  8. Combine melted butter and hot water with a whisk.
  9. Once the eggs are whipped up, sift the flour mixture into the eggs and carefully fold them in with a spatula, in 2 additions.
  10. Once there is no streaks of flour, add the melted butter mixture and fold it in again, until thoroughly incorporated.
  11. Divide between two prepared pans. Put wet cake strips around pans (if available), to keep cakes leveled.
  12. Bake for about 15 minutes, or until a toothpick/skewer inserted in the middle comes out clean. Do not over-bake or the cake will be dry.
  13. Let rest in the pan for 2-3 minutes, then carefully invert onto a cooling rack and let cool.
  14. Remove the prunes from the water and thoroughly dry with a paper towel. Chop into small pieces.
  1. Combine chilled sour cream and chilled heavy cream in a bowl of a mixer fitted with a whisk attachment. Start whipping, going from slower speeds and increasing the speed as the cream thickens.
  2. Once 1½ cup cream has some volume, add 1½ cup powdered sugar in 3 additions and 1 tbsp vanilla extract. Continue whipping until stiff peaks. Refrigerate until ready to use (try to use within 30 minutes of making).

  1. Split each cake layer horizontally into 2 even layers, making 4 cake layers total.
  2. When layering always put the cut side up, except for the last cake layer, that one must be the bottom side up (to make for an even surface of the top).
  3. Place a dab of frosting on your serving plate.
  4. Put 1 of 4 cake layers on the plate, put 4 2-3 inch strips of foil of parchment paper right under the cake, to cover the serving plate and to make for easy clean up after the cake has been decorated.
  5. Brush the cake with some simple syrup.
  6. Put 1 cup of frosting, even it out with a spatula.
  7. Sprinkle 1/3 of the chopped prunes and 1/3 of the chopped walnuts. Cover with second layer of cake, press down to make it flat and repeat with syrup, frosting, prunes and walnuts. Do the same with the next cake layer. Finish with 4th cake layer bottom side up. Cover the whole cake in frosting.
  8. Place the leftover frosting in a pastry bag fitted with a star tip and pipe out stars on top of the cake, starting from the edge and working towards the middle.
  9. Put 1 dry blueberry in the middle of each piped star, to make a center of the ‘flower’.
  10. Finish the cake with the chocolate cookie crumbs on the sides of the cake. To do this, take a handful of crumbs in the palm of your hand, keeping it open but ‘cupped’, gently press against the sides of the cake, letting excess fall off. Keep going around the cake until the cake is covered in crumbs. Remove the cake strips from under the cake, exposing clean platter. Cover the cake and refrigerate overnight. Serve chilled with coffee or tea.
