Soft moist chocolate cake in between layers of sweet cream and prunes. A simple chocolate cake recipe!
In a small saucepan, bring 1/2 cup sugar, 1/2 cup water, and 1 tbsp vanilla extract to boil, mix until all sugar dissolves. Turn off heat. Let cool.
Pour warm water over 1 cup prunes to soften them. Set aside.
Finely chop 1/2 cup walnuts. Set aside.
Melt 6 tbsp butter in the microwave. Set aside.
In a bowl of a mixer fitted with the whisk attachment whip 5 eggs on high for 1 minute. With the mixer still running slowly add 1¼ cup sugar and continue whipping for 5-6 minutes, until pale yellow and fluffy.
Meanwhile combine 1¼ cup flour, 5 tbsp cocoa, and 2 tsp baking powder and get fine sieve ready.
Once 1½ cup cream has some volume, add 1½ cup powdered sugar in 3 additions and 1 tbsp vanilla extract. Continue whipping until stiff peaks. Refrigerate until ready to use (try to use within 30 minutes of making).
