Pepper and Goat Cheese Crostini is an easy and delicious appetizer which is made with slices of fresh baguette, caramelized onion, sauteed pepers and goat cheese.
Heat skillet with 3 tablespoons of oil over medium-high heat and add the chopped onions. Saute for 4-5 minutes until the onions are slightly caramelized.
Add 2 teaspoons of SPLENDA® Sugar Blend OR 1 tablespoon of granulated sugar to bring out the sweetness of the onion.
Add 2 tablespoons of balsamic vinegar (if using), stir and saute for another minute or two until the liquid is evaporated and the onions have gained some more color. Transfer the onions to a bowl.
Add 1 tablespoon of oil to the skillet, then add the bell pepper. Cook over high heat until the peppers are well caramelized. Add salt and stir. Cook for another minute. Transfer to the bowl with onions.
