Juicy salmon patties made from scratch, crispy pastries that are tender and juicy on the inside.
Remove skin from the filet. Chop it into 1/4 pieces.
Mix 1¼ lbs salmon, 1/3 cup bread crumbs, 2 tbsp mayonnaise, 1/4 cup grated onion, 2 tbsp parsley,¾ tsp salt and 2 tbsp lemon juice together. Carefully form 3 inch round patties, about 3/4 inch thick.
Meanwhile, place 1/2 cup flour in one bowl, 2 beaten eggs in the second bowl and 1 cup panco breadcrumbs in the third bowl.
