Ingredients
- 3/4 English cucumber
- 6 oz. can of tuna drained
- 1 Tbsp mayonnaise can be replaced with 1.5 tablespoons olive oil
- 3-4 Tbsp cheddar cheese
- 2-3 Tbsp chopped green onion optional
- 1/4 avocado cut into chunks
- Salt & Pepper to taste

In a bowl combine 6 oz drained tuna, 1 tbsp mayonnaise, 3-4 tbsp cheddar cheese, 2-3 tbsp green onion (if using), salt & pepper. Stir until everything is well combined.

Cut cucumbers into 2/3 of an inch to 1 inch pieces. Using a Melon Baller or a teaspoon, cut out an indentation about /14 inch deep. This is just to keep the filling in place. Then using a Small Cookie Scoop or a spoon fill each cucumber cup with about a tablespoon of the filling.

Top with a piece of an avocado and a shred or two of cheese for garnish.
