Ingredients
  • 1 lb Darigold Medium White Cheddar Cheese or another good quality White Cheddar Cheese
  • 1/4 cup chopped parsley
  • 1 cup olives
  • 1-3 cloves garlic
  • 1/4 cup olive oil
  • 1 tsp crushed red pepper flakes
  • 1 cup rucola leaves

Instructions

  1. Mix 1/4 cup parsley, 1-3 crushed garlic cloves, 1 tsp red pepper flakes, and 1/4 cup oil.

  2. Combine the cubed cheese, parsley mixture and the olives.
  3. Arrange the rucola leaves on the plate, top with the cheese and olive mixture.
