Pasta in Sweet Cream Cheese Sauce
When I made fresh pasta for the first time, I knew I wanted to make a meal that would showcase the beauty of the Homemade Pasta. The first thing that came to my mind to make Pasta in Sweet Cream Cheese Sauce. The recipe was a take on the something that my mom used to make for us when we were kids. She would use fresh farmer’s cheese in place of cream cheese and sometimes add raisins to it too. The pasta wasn’t really “saucy”, it was more of thick creamy consistency since the fresh farmer’s cheese would warm up and became creamy.
With the replacement of cream cheese the sauce becomes smooth, silky and gives you just the perfect bite with each forkful. It is very hard to stop when you’re in front of a bowl of Pasta in Sweet Cream Cheese Sauce. The more you brown the butter, the nuttier the flavor gets. I keep going back and forth between browning it more or less, still can’t decide how I like it more. When you brown it more, but butter grown and speckles the sauce with it. That nuttiness from the browned butter does add a nice depth of flavor though.

Pasta in Sweet Cream Cheese Sauce
Ingredients for the Sweet Cream Cheese Sauce:
- cream cheese
- whole milk
- butter
- granulated sugar
- vanilla extract
- dry pasta OR one recipe of Homemade Pasta, cooked, al Dante; then, drained
How to make Pasta in Sweet Cream Cheese Sauce
- To a pan add 3 Tbsp butter and melt over low-medium heat until slightly brown. Add 8 oz cream cheese and whisk together until the cream cheese is smooth. Next, add 2 cups of whole milk and whisk until the sauce is smooth once again.
- Cook it down to thicken, whisking constantly, about 5. minutes.
- Add 1/2 cup sugar and 1 Tbsp vanilla extract and whisk one last time.
- Now add 1 lb of cooked and drained pasta. Stir to coat. Taste for sweetness and adjust as necessary. Serve immediately.

This reminds me of the sweet noodle kugel I make for Rosh Hashanah and also the “sweet noodles” my grandma used to make when she babysat for us…buttered egg noodles topped with a scoop of cottage cheese and a general sprinkle of sugar.
With a scoop of cottage cheese is exactly how we grew up eating this too. I’m feeling so much nostalgia every time I eat it or make it for my kids these days.
The sweet noodle kugel you mentioned we called “zapekanka” and my mom still makes it sometimes with the addition of raisins. I love being able to share recipes and to stories of how others ate or eat similar dishes.Thank you for sharing, Ann!
I haven’t made this yet, but I intend to. I’m guessing you could add blueberries, other fruits, chocolate … anything you’d put in a cheesecake.

Do you eat this on it’s own? Like for breakfast? Or do you serve it with something?
We eat it for breakfast or even dinner if we had a big lunch. So, it’s eaten as is, with nothing else.

In the first recipe, your ingredients call for ONE cup of milk, but in the instructions, you say to add TWO cups of milk. In your second recipe, your ingredients say to use TWO cups of milk, but in the instructions, you say to add ONE cup of milk. Please help! Thank you.
Oh boy lol. It’s 2 cups that are basically cooked down until only about 1 cup is left. I fixed the ingredient list an the recipe instructions. Thanks for catching that!
