What are macarons?
Macarons are two gluten free, meringue like cookies made with egg whites and almond flour that are sandwiched together with a filling.
What makes a perfect macaron?
- Smooth, unbroken tops
- Even, ruffled “feet”
- Full, not hollow inside of the shells
- Soft, moist, slightly chewy interior
- Crispy top
- Filling that does not come out past the shell edges
