I made these Pork Kabob Skewers this past Memorial Day get together and they were such a hit, I had to share them with you! The meat came out super tender and juicy, and the smoky bacon flavor was just incredible!

By the way, that pepper in between each kabob? Oh my! It’s so, so good! Grilled peppers are always a hit around here, but add some meat around them and oh my! Try it, you guys!

Pork loin tends to be on the dry side since it doesn’t have much fat within the meat, so wrapping the kabob pieces in bacon not only gives it the juiciness, but also imparts it with the smoky flavor from the bacon. The idea of wrapping the meat in bacon is not novel, but definitely a good one!

What other vegetables can be used between the kabob pieces?

I love adding the vegetables in between the skewers for even more flavor! This time I used pieces of colored pepper, but pieces of zucchini, onion, mushrooms or even pineapples would also be great!

What’s a good substitute for pork loin? 

You can use chicken breast in this recipe with the same incredible results. Since both pork loin and chicken breast are low on fat, in this recipe they’re easily substituted for each other.f

Ingredients for Bacon Wrapped Pork Kabobs

  • Use the best quality pork you can find. It is best if the meat has not been previously frozen, this will make sure that your kabobs are super juicy.
  • This recipe also uses the Spicy Paprika Blend, but you can use any meat seasoning you might have. Johnny’s Seasoning is my favorite one to use if I do not have the one I mix myself. Make sure to cut or completely omit the salt if you use seasoning with the salt added.
  • Bacon – I like to  use thinly sliced bacon for this recipe, since I want a bit of fat around each kabob but not a ton. Do choose bacon that is smoked, as that’s in part what makes these the best!

How to make Bacon Wrapped Pork Kabobs

Toss all ingredients, except for the bacon together in a bowl or a large ziplock and massage the seasoning into the meat.

Wrap each cube of pork with 1 piece of bacon, then alternate the pork/bacon with peppers on the pre-soaked skewers, leaving about 1 – 2 inches of space at the end of the skewers.

How to prevent meat from sticking to the grill grates

  • The recipe to success here, is to start with an absolutely clean grill. To clean it thoroughly, make sure to use a good iron grill brush. It removes all the burnt on pieces and ensures that they don’t end up on your food.
  • After getting all the burnt on pieces loose, wipe them off with a wet paper towel.
  • Lastly, use an oiled paper towel to go over the grates, or turn off grill for a second and spray with non stick spray.

How to grill Bacon Wrapped Pork Kabobs

Place the prepared Pork Skewers on the grill and grill for 3-4 minutes per sides or until well browned (total time, about 11-13 minutes). Then, remove and allow to sit, covered for 2-3 minutes to allow all the juices to redistribute.

  • Tzatziki Sauce – refreshing yogurt, cucumber and dill sauce that’s awesome with kabobs!
  • Chimichurri Sauce – green parsley and garlic sauce is totally boss!

Ingredients

  • 3 lbs pork loin , cut into 1.5 inch cubes
  • 3 tbsp oil or mayonnaise
  • 1/2 tbsp kosher salt
  • 3 tbsp Paprika Spice Blend
  • 1 lb bacon thinly sliced, each strip cut into 3
  • 3 bell peppers , assorted colors, cut into 1.5 inch cubes

Instructions

  1. Pre-soak the wooden skewers in water for at least 30 minutes before using. Collect all of your ingredients needed for the recipe and prep them. 

Paprika Spice Blend

  1. Make the Paprika Spice Blend following the recipe HERE. Use only 3 Tbsp of the spice blend for this recipe. 

How to prepare the Pork Kabobs

  1. In a large bowl or in a ziplock bag, toss together the pork cubes, oil or mayonnaise, kosher salt and the paprika spice blend. Rub the spice well into the meat by massaging it in. 

  2. Wrap each piece of pork with a thin slice of bacon and thread it onto the skewer. Place a piece of pepper after each pork cube. Leave at least 1 inch of space at at the ends of the wooden skewers. 

How to clean the grill

  1. Once the meat is all threaded onto the skewers, preheat the grill for about 10-15 minutes to burn off any remnants of food. Next, thoroughly clean it by brushing the grates with an iron bristled brush. Follow by a water soaked paper towel. Next, turn off the grill for, spray the grates with non stick spray and turn the grill back on. 

How to Grill Pork Kabobs

  1. Grill on medium heat for about 3-4 minutes per side or until the internal temperature registers at 145F on a thermometer. Remove off the grill, cover with foil for 2-3 minutes before serving.
