Cucumber and Tomato Salad is my husband’s favorite, so I make it quite often and not just for dinner or lunch. The other day, when I asked him what he wanted for breakfast, his request was fried eggs and the Cucumber and Tomato Salad. I know, super typical. I mean, who doesn’t have a salad with their eggs for breakfast, right? 😀

Then, one day I was trying cleaning out the fridge and found a lonely log of goat cheese and of course I had to utilize it in the best way I know. I added it to my favorite Cucumber and Tomato combination and it was the best thing ever. It’s almost like adding a sour cream dressing, but better. If you’ve never made a Cucumber Tomato Goat Cheese Salad, I am inviting you to! You won’t regret it!

Ingredients for the Easy Cucumber Tomato Goat Cheese Salad

  • Cocktail Cucumbers are best for this recipe, but you’re welcome to use regular English Cucumbers instead.
  • Use regular chopped tomatoes if that’s what you have on hand. Cherry tomatoes keep their shape well and look better for esthetic purposes.
  • Dill and olives are optional.

How to Make Cucumber Tomato Salad 

Chop the cucumbers, tomatoes, onion and the dill. Combine all ingredients, including the olives and the goat cheese with the olive oil and toss to coat.

Ingredients

  • 6-7 cocktail cucumbers
  • 2 cups cherry tomatoes
  • 1/2 large sweet onion
  • 1/2 cup goat cheese
  • 1/4 cup black olives
  • 1 tbsp chopped dill
  • 2-3 tbsp olive oil
  • 1/2 tsp kosher salt

Instructions

  1. Cut the cocktail cucumbers into 1/4 inch circles, tomatoes in half and the sweet onion to a small dice. Finely chop the dill as well. 

  2. Combine all ingredients, including the black olives, olive oil and the salt in a bowl. Toss to combine. Taste and adjust the seasoning if needed. 

Recipe Notes

Substitutions - 

  1. Cocktail cucumbers can be substituted with regular English cucumber. 1 recipe needs about 2 cups of chopped cucumbers.
  2. Cherry tomatoes can be substituted with regular tomatoes. 1 recipe requires about 2 cups of chopped tomatoes.
  3. The olives and dill can be omitted if you're not a fan.
