Breakfast Potatoes in the Air Fryer

Breakfast Potatoes made in the Air Fryer are cooked in only 15 minutes and produce the crispiest and creamiest potatoes your breakfast plate is begging for. They taste just like the potatoes you get at the restaurant, but healthier and with only a tiny amount of oil.

Serve the air fried potatoes with a sunny-side-up egg and you’ve got a picture-perfect breakfast. If you’re feeling a little extra, add some cooked and chopped ham, sausage, bacon, or diced peppers and onion.

Most days I spend only a couple of minutes for breakfast, you know, to either toss together an avocado toast or maybe fry an egg, but on weekends it’s different.

Best Breakfast Potatoes Recipe

On the weekends,  I let the Air Fryer cook these potatoes while I prep the rest of the breakfast. In the time it takes to make coffee and maybe fry an egg the air-fried potatoes are all ready.

I always get giddy with excitement when I hear the timer go off and open the air fryer basket to find beautifully golden, crispy, and easy breakfast potato bites.

How to make Crispy Breakfast Potatoes

  • The process couldn’t be simpler – start with either peeled or thoroughly scrubbed potatoes, then dice them into 1-inch cubes.
  • Toss the potatoes with seasonings (you can use just a couple of teaspoons of Paprika Spice Blend or use the one from the recipe below) and oil. Then, cook in the air fryer for 15 minutes or until tender on the inside. You’ll want to stop and shake the air fryer basket several times to promote even cooking.

Tips for Success: 

  • If time allows, peel, and dice the potatoes several hours ahead, or the night before and soak in water.
  • Season the potatoes right before cooking. Allowing the potatoes to sit with salt, will draw the moisture out, which will inhibit the crisping process.
  • Cut the potatoes all the same size, this will ensure that all potatoes are evenly cooked and browned.

  • 5 medium potatoes, peeled and cut to 1-inch cubes (Yukon Gold works best)
  • 1 tbsp oil

Instructions

  1. Preheat the air fryer for about 2-3 minutes at 400F degrees. This will give you the crispiest potatoes. 

  2. Meanwhile, toss the potatoes with breakfast potato seasoning and oil until thoroughly coated. 

  3. Spray the air fryer basket with a nonstick spray. Add the potatoes and cook for about 15 minutes, stopping and shaking the basket 2-3 times throughout to promote even cooking.

  4. Transfer to a plate and serve right away.

    Great recipe (that warms up nicely for leftovers). This was my first time using my Kitchen Aid combo air fryer and toaster oven. Thank you for the very clear recipe instructions as I was a bit nervous!. I am not a fan of smoked paprika and substituted with crushed rosemary and added grated parmesan cheese. The oven defaults to 400 degrees for air frying which I used for 20 min, stirring twice during the baking. The potatoes were soft and, flavorful and somewhat crispy. I was afraid to cook them much longer for drying out. To me and my guests, the end result was very satisfying. I will definitely do this one again.

  • Absolutely perfect & delicious! I used red potatoes cuz I had them & they turned out so crispy & amazing! I cut the pieces pretty small, so it took about 12 minutes with a few stops to shake the basket.

    These were tasty! I used regular potatoes and am lazy so did not peel. Shook every 4-5 minutes. Cooked for about 17 mins total. I added a 1/4 tsp of chili powder to the seasoning. I might try cutting up some onions and bell peppers to add in the future.

    **you may have to adjust time based on your model of air fryer. There is no way author will know what style you have so just check your taters when you think they are done before you pull them all out. **

    Potatoes were hard and under cooked. I do not recommend this recipe. Just baked them

    • It just means that you needed to continue cooking them longer until they were soft.
      Cooking is not an exact science because we all use different equipment, ingredients and have different environments. But typically, if something’s not done in the time listed prolonging cooking time will fix it.

    These were DELICIOUS. Restaurant quality. I have the PowerXL Classic Air Fryer. I cooked them for 15 minutes at 400 like the recipe said and they were perfect. I shook them about 3 times throughout the 15 minutes. Will definitely make these again!

    Loved the seasoning! I ended up cooking it much longer to get it crispy. Next time, I may use slightly more oil and maybe set temperature at 425 degrees. Thanks for the recipe!

    I used an Instant Vortex 6qt air fryer and this recipe came out great! The few times I pulled the basket out to shake them up was necessary as there was a bit of smoke coming out. The potatoes were nice and crispy, we just added extra salt.

    Great flavor, easy recipe!

    I used a Galanz air fryer oven, available through Costco, 400 degrees, needed more like 20 minutes, though I did make twice the recipe, so had two trays.

    We have the ifood fryer/oven. I cooked for 13 minutes, then left them in the basket with door open for remaining 2. Just crisp, very flavorful, and perfect with sunny side eggs on top. Thanks!

    These are the best recipes I have come across with. You should open a bakery with just breakfast hours. That way you have the rest of the day for yourself. Bakeries are very few today because the big supermarkets put them out of business. But people want quality, I buy a garlic round loaf of bread at wegman’s supermarket for $4.25.They have the best bakery products in our area. Your blog is great,but it does not make money.Nothing ventured,nothing gain

      I love a good breakfast spot and we frequent one particular one here in our area. At this point in my life it’s not something I can do, but who knows, may be some day.

    • Hi Rosemary,
      I have included the link to the one I have and use in the post. So far, I really like it. Any air fryer that is 6 qt or bigger is probably the best. Using anything smaller is just too small.
