Quick Ricotta Doughnuts
Quick Ricotta Doughnuts – just stir, roll and fry! Quick easy dessert that’s a crowd pleaser, every single time!

Over the past few weeks I have been living and breathing books, studying and school. If I do make something to eat, it’s quick like these Quick Ricotta Doughnuts. Good thing these are also crispy on the outside, super soft, moist and delicious on the inside, otherwise quick or not would not matter 😉
Our family, like anyone else I think, loves a good doughnut, but unless you go out and buy them, it can be quite time consuming to make from scratch.
Not these doughnuts though. They’re not yeast-based, so they don’t require hours of rising time.
Instead you literally take 2-3 minutes to mix the dough, then you roll the balls and go straight to frying these babies. If you use a wide pot, you can be done frying in about 3 batches, but if you don’t like to waste too much oil like I do, then use a smaller pot and just fry fewer pieces at a time.
Can you see how these would be great to serve at your party as you watch the big movie awards? Oh yeah!
Finger food? Check! Easy to make? Check! Super delicious? Check. A bite or two in each piece? Check! Should you run and make them right now? Check. Yes!
Quick Ricotta Doughnuts
Ingredients for Quick Ricotta Doughnuts:
- full-fat ricotta cheese
- egg
- flour (+ more flour for rolling)
- SPLENDA® Granulated or granulated sugar
- vanilla extract
- baking soda
- Oil for frying
How to make Quick Ricotta Doughnuts:
- Combine 32 ounces of ricotta, 1 egg, 2/3 to 1 cup SPLENDA® Granulated (or sugar) and 2 tsp vanilla extract together with a whisk until smooth and well mixed
- Add the 2 1/4 cups flour and 1 teaspoon of baking soda, then with minimal amount of strokes, using a large fork mix everything together until just combined.
- Pour about 1 inch of virgin olive oil into a heavy bottomed pot or a dutch oven and heat over medium heat until 360F (insert a heatproof thermometer into the oil, without touching the bottom and check the temperature, or use a thermometer that attaches to the side of the pot).
- Now working quickly, use a 1 tablespoon ice cream scoop or a regular tablespoon to spoon 1 tablespoon of dough into a flour filled bowl. Roll the ball in the flour,
then roll between the palms of your hands into a ball. Transfer to a well floured surface.
- Once the oil has heated to 360F, drop the rolled doughnut balls into the oil and fry for about 3-4 minutes or until deep golden color. The doughnuts should turn on their own, but if you overcrowd the pot they might need a little help turning. You can tear one doughnut apart to make sure they’re cooked all the way inside.
- Remove the fried doughnuts to a paper towel lined plate. Serve hot with a choice of jam, condensed milk or chocolate ganache.
Allow the frying oil to cool, then discard.

The appeal of a donut most of the time is the flavor that is created by frying something in oil. If you’re looking to bake them, instead of frying them you would be missing out on that unique component. Having said that, yes, you can bake them. I would spray them with oil before baking, then bake at 350F until they’re cooked through in the middle. If I had to estimate, I’d say about 15 minutes, but you will have to try it and see.

PLEASE look into the sugar substitute splenda!!! It is extremely unhealthy!!! Not wanting to start any arguments…just pointing out since not everyone looks into it;)

These are the only doughnuts I will eat. My mom used to make them but I’ve never made them myself. Our local Russian shop sells these doughnuts but in giant sizes, so once in a while I buy one for each of us. The photos are so gorgeous I can almost taste them. Yum!
