In my opinion, contrasting flavors are what give depth to a good recipe, and you won’t find any that work together as well as sweet and slightly tart. This dish gives highlight to both of these with strawberry and rhubarb both offering that sweet-sour palette.

I’ve made several variations of it before, but this is hands-down the best strawberry rhubarb crisp I’ve tried. It isn’t only the filling that makes it excellent, but also the almond crisp topping that adds a layer of soft crunch to the top. The buttery crisp topping takes the entire experience to a new level!

Most of us are familiar with the taste of strawberries, but rhubarb is a bit less common. If you are wondering what rhubarb tastes like, you aren’t alone. The stalks of this vegetable are quite tart when eaten raw, almost like a green apple with less sugar.

However, when you cook it, it becomes sweeter. Just as in this easy rhubarb recipe, it is commonly combined with fruit and cooked into desserts—just like this strawberry rhubarb crisp recipe.

How to Freeze this Strawberry Rhubarb Crisp Recipe

If you have a large bounty of strawberry and/or rhubarb, one easy thing to do is double this recipe and then freeze one of the crisps. To do so, assemble the crisp up to the point of baking, then cover with 2 layers of foil and put in the freezer to freeze.

Remember – if you are freezing it in a porcelain or glass baking dish, you’ll need to thaw it for a couple of hours before baking so the dish doesn’t crack and break as you place it in the oven. On the other hand, if you’re freezing the crisp in a metal baking pan it can go straight from the freezer to the oven.

The baking time may need to be adjusted slightly, particularly when cooking from frozen. Check on your crisp periodically and watch for doneness. If it is browning faster on the top than it’s baked through, cover it with foil.

How to make the Strawberry-Rhubarb Sauce

  1. Preheat oven to 350F degrees.

  2. In a bowl combine 2 cups rhubarb, 2 cups strawberries 1 tsp lemon juice and 1/3 cup sugar. Separately whisk together 1 tbsp corn starch and 2 tbsp water. Now combine the two mixtures and mix thoroughly.

    Transfer to an 8"x8" baking dish or any other ceramic deep dish and spread into an even layer.

How to make the Almond Crisp

  1. Mix all ingredients(1/2 cup flour, 1/2 cup oatmeal, 1/2 cup almonds, 1/4 cup sugar, 1/4 brown sugar, 1/4 tsp salt, 1 tsp almond extract and 6 tbsp butter) in a bowl until the mixture is moist and resembles crumbles.

    Sprinkle the mixture evenly over the fruit.

Assemble & Bake

  1. Transfer the baking dish to the oven and bake at 350F degrees for about 45 minutes, or until the fruit sauce in the middle is thickened and bubbles.

    If the crisp top browns faster than it is baked through, tent with foil.
