Pepper and Goat Cheese Crostini

Pepper and Goat Cheese Crostini is an easy and delicious appetizer which is made with slices of fresh baguette, caramelized onion, sauteed pepers and goat cheese. Then, everything is sprinkled with basil for freshness.

Caramelized Onion, Bell Pepper and Goat Cheese Crostini are a great and colorful snack, or a go-to picnic appetizer. Baguette slices can be switched up to crackers or any other vessel you can think of.

To aid in caramelization of onions, sugar is usually added the during cooking process. In this recipe, I replaced it with  SPLENDA® Sugar Blend to cut down some calories. If you’re looking to save some calories not just at home, but while eating out as well, make sure to ask for SPLENDA® Sweetener Products by name, to prevent being served a generic brand.

If you’re serving a large crowd and don’t want to fuss with spreading the topping over anything, just layer a 1/2 inch of goat cheese on a large platter, top it with the Caramelized Onions and Bell Pepper and finish it off by a sprinkle of basil. Next, place a bowl of crackers or sliced baguette/bread next to the platter for a festive buffet style appetizer. You might want to multiply the recipe if you’re going to serve it for a large crowd.

Pepper and Goat Cheese Crostini

Ingredients for Pepper and Goat Cheese Crostini:

  • chopped onions
  • chopped to 1-inch long slices bell pepper, in assorted colors
  • olive oil
  • SPLENDA® Sugar Blend OR granulated sugar
  • kosher salt
  • black ground pepper (optional)
  • balsamic vinegar (optional)
  • chopped basil
  • goat cheese
  • slices of baguette

How to make Caramelized Onion, Bell Pepper and Goat Cheese Crostini:

Heat skillet with 3 tablespoons of oil over medium high heat and add the chopped onions. Saute for 4-5 minutes until the onions are slightly caramelized. How to make caramelized onion with oil and sugar.
Add 2 teaspoons of SPLENDA® Sugar Blend OR 1 tablespoon of granulated sugar to bring out the sweetness of the onion.

Caramelized onions with sugar or splenda.

Add 2 tablespoons of balsamic vinegar (if using), stir and sauté for another minute or two until the liquid is evaporated and the onions have gained some more color. Transfer the onions to a bowl.

Add 1 tablespoon of oil to the skillet, then add the bell pepper. Cook over high heat until the peppers are well caramelized. Add salt and stir. Cook for another minute. Transfer to the bowl with onions.

How to caramelize bell peppers in a skillet.

Stir together. Taste. Adjust seasoning and add black pepper if desired.

Now top each piece of sliced baguette with some goat cheese, then add a spoonful of onion and bell pepper mixture, sprinkle with chopped basil and enjoy!

To add the ruffled border of goat cheese, use the tips of the fork to press some goat cheese to the edge of the baguette, scraping it against the edges of the baguette slice. How to add goat cheese to one side of the baguette with a fork and then onions and peppers on the other side.
