How Long Does Homemade Tzatziki Sauce Last?

Tzatziki sauce should be consumed within 2-3 days of making it. The grated cucumbers will become more watery as they sit, which will change the texture of the recipe. Because this is an authentic version, there are no additives or preservatives added. I recommend consuming it the same day you make it, or the day after for best results.

I do not recommend freezing this recipe. Cucumbers are notorious for not handling the freezing and dethawing process well. If you attempt it, you may be left with a mushy, unappetizing sauce.

What is Tzatziki Sauce Made Of?

Authentic tzatziki has a base of full-fat thick, strained yogurt mixed with fresh dill, cucumbers, and spices. Some recipes call for olive oil to add more fat content to the sauce, particularly if a low-fat yogurt was used. Other variations include swapping out yogurt for sour cream or adding parsley and/or mint in addition to dill.

This is the best authentic tzatziki sauce recipe I have tried. Thankfully a homemade tzatziki sauce is an easy recipe to recreate.

The only slightly time-consuming part is grating and straining the cucumber, and even that takes minutes. Then,  take all of your ingredients, mix them together and enjoy. It’s that simple to learn how to make tzatziki.

Tips to Make the Best Tzatziki Sauce

  • I recommend using a full-fat Greek yogurt, but if you only have a low-fat version on hand, you can add a couple of tablespoons of high-quality olive oil to up the fat content and flavor.
  • This recipe tastes much better with fresh dill. Make sure to chop it roughly—you do not want the dill to be too fine.
  • To grate your cucumber, you will need to peel it, then cut and de-seed it. Use a cheese grater or a zester to grate the cucumber, then use a cheesecloth to gently squeeze and strain out all the moisture to prevent a watery sauce.

Tzatziki Sauce Ingredients

  • 2 cups greek yogurt, plain
  • 1/2 English cucumber, grated, then strained of juice
  • 2 cloves garlic finely chopped
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 2 tsp white vinegar or lemon juice
  • 1/2 tsp salt
  • 1/4 cup dill roughly chopped
